The Best Sandwich

This is a pretty good roasted sandwich. It’s important to use all the ingredients listed, except arugula which you can substitute, because it’s a delicate balance.

1 cup sliced apples (tart-sweet granny smith or the likes)
1/2 cup thinly sliced onions
1 cup thickly sliced mushrooms
1 tablespoon melted butter
1 tablespoon mayo
1 tablespoon chopped fresh dill
20 inch baguette
1 cup arugula (substitute any lettuce if you'd like if arugula it's handy)
1/2 cup packed grated gruyere cheese

Preheat oven to 400 degrees.

Toss apples, onions, and mushrooms with melted butter and place them in prepared baking dish. Roast for 15 minutes.

Meanwhile combine mayo and dill in a small bowl. Slice baguette in half lengthwise. Cover one half of bread with arugula, spoon the roasted mixtures and top with cheese. Spread dill/mayo mix on other half, put together, slice and serve.

Takes about 25 minutes and makes 2 to 3 sandwiches.
